Detecting Admixture to Mango Purée of the Alphonso Cultivar (Mangifera indica L. cv. Alphonso) by 1H-NMR Spectroscopy

Abstract Food authenticity is becoming increasingly important but challenges existing analytical methods. In this study, we analyze the mango cultivar Alphonso with regard to using 1 H-NMR spectroscopy. This has been termed “the king of mangoes” due its unique flavor. Regarding metabolites however, little known about constellations that allow for differentiation cultivar. We find distinguished by high levels niacin, trigonelline, and histidine features relatively low alanine. Furthermore, develop a model based on local outlier factor algorithm effectively detects admixture non-Alphonso cultivars purée. task highly challenging because identified no are or uniquely absent in compared other analyzed study. Our shows promising results test set: Admixtures consisting 35% 65% purée were uncovered sensitivity 88%. At same time, our verified samples good specificity 86%.
